Ingredients
  

  • 1 lb potatoes peeled and diced
  • 12 oz smoked sausage sliced
  • 1 onion chopped
  • 2 carrots diced
  • 2 stalks celery diced
  • 2 cloves garlic minced
  • 4 cups chicken or vegetable broth
  • 1 cup cream or milk
  • 2 tbsp olive oil or butter
  • to taste salt and black pepper
  • 2 tbsp fresh parsley chopped for garnish

Equipment

  • Large pot
  • Knife
  • Cutting board
  • Potato masher or immersion blender

Method
 

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Add onions, carrots, and celery; sauté 5–7 minutes.
  3. Stir in garlic; cook 1 minute.
  4. Add potatoes and broth; bring to boil, then simmer 15–20 minutes until tender.
  5. Mash some potatoes for thicker texture; leave chunks for texture.
  6. Add sliced sausage; simmer 5–7 minutes.
  7. Stir in cream or milk; season with salt and pepper.
  8. Garnish with parsley and serve warm.

Notes

Use Yukon Gold potatoes for creamy texture.
