Ingredients
  

Shortbread Dough
  • 2 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 cup powdered sugar
  • 1 cup unsalted butter softened
  • 1 tsp vanilla extract
  • 0.5 tsp salt
  • 0.75 cup mini chocolate chips
  • 0.5 cup toffee bits

Method
 

  1. Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a bowl, cream butter, granulated sugar, and powdered sugar until fluffy.
  3. Mix in vanilla and salt.
  4. Add flour gradually until dough forms.
  5. Fold in mini chocolate chips and toffee bits.
  6. Shape dough into a log or disk, chill 20–30 minutes.
  7. Slice into 1/4–1/2 inch cookies and place on prepared baking sheet.
  8. Bake 14–18 minutes until edges are lightly golden.
  9. Cool on a wire rack and serve.

Notes

For extra flavor, add a sprinkle of flaky sea salt before baking.
