Ingredients
  

Queso Base
  • 2 tbsp unsalted butter
  • 0.5 cup yellow onion finely diced
  • 2 cloves garlic minced
  • 2 cups fresh spinach chopped
  • 4 oz cream cheese softened
  • 1.5 cups white American cheese shredded
  • 0.75 cup whole milk
  • 4 oz diced green chilies drained
  • 0.5 tsp salt
  • 0.25 tsp white pepper

Method
 

  1. Melt butter in a saucepan over medium heat.
  2. Add diced onion and cook until soft and translucent.
  3. Stir in garlic and cook briefly until fragrant.
  4. Add chopped spinach and cook until wilted and moisture evaporates.
  5. Reduce heat to low and add cream cheese, stirring until smooth.
  6. Slowly stir in milk to create a creamy base.
  7. Add white American cheese gradually, stirring constantly.
  8. Stir in green chilies, salt, and pepper.
  9. Simmer gently until thick and creamy, then serve warm.

Notes

Serve immediately for best texture. Reheat gently with extra milk if needed.
