Casserole Base
  • 2 cups cooked chicken breast diced
  • 1.5 cups white rice uncooked
  • 2 cups broccoli florets fresh
  • 3 tbsp unsalted butter
  • 2 cloves garlic minced
  • 3 tbsp all-purpose flour
  • 1.5 cups chicken broth
  • 1 cup heavy cream
  • 1.5 cups cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13-inch casserole dish.
  2. Cook rice according to package instructions and set aside.
  3. Steam broccoli florets for 2–3 minutes until bright green; drain well.
  4. Melt butter in a skillet, sauté garlic until fragrant, then whisk in flour.
  5. Gradually whisk in chicken broth and cream until thickened.
  6. Season sauce and stir in half of the shredded cheese.
  7. Combine rice, chicken, broccoli, and sauce in a large bowl.
  8. Transfer to casserole dish, top with remaining cheese, and bake 25–30 minutes.

Notes

Let casserole rest 5–10 minutes before serving for best texture.
