Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter melted
Filling
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 0.75 cup sour cream
  • 0.5 cup heavy cream
  • 3 eggs large
  • 1 tsp vanilla extract
  • 0.75 cup pistachios finely chopped
Topping
  • 1.5 cups cherry pie filling

Method
 

  1. Preheat oven to 325°F (165°C) and prepare a springform pan.
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into pan and bake 10 minutes.
  3. Beat cream cheese until smooth, then add sugar and mix well.
  4. Blend in sour cream, heavy cream, vanilla, and salt.
  5. Add eggs one at a time, mixing gently.
  6. Fold in chopped pistachios and pour batter over crust.
  7. Bake 60–70 minutes until edges are set and center slightly jiggles.
  8. Cool gradually, refrigerate, then top with cherry filling before serving.

Notes

Chill overnight for best texture and flavor.
