Cheesy Smoked Sausage and Potatoes

  • 1 lb smoked sausage sliced
  • 2 lb baby potatoes cut into chunks
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt to taste
  • 0.5 tsp black pepper
  • 1 cup cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 0.5 cup heavy cream

Equipment

Method
 

  1. Preheat oven to 400°F (200°C) and grease a large baking dish.
  2. Toss potatoes with olive oil, salt, pepper, paprika, garlic powder, and onion powder.
  3. Bake potatoes for 25–30 minutes, stirring halfway through.
  4. Sauté onion in butter until soft. Add garlic and smoked sausage and cook until browned.
  5. Add sausage mixture to potatoes and stir gently.
  6. Mix cream with half the cheese and pour over the dish.
  7. Top with remaining cheese and bake 15–20 minutes until bubbly and golden.
