Ingredients
  

Corn Base
  • 4 cups corn kernels fresh, frozen, or canned
  • 2 tbsp unsalted butter
  • 2 cloves garlic minced
Cheese Mixture
  • 4 oz cream cheese softened
  • 0.5 cup milk
  • 1 cup cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp smoked paprika

Method
 

  1. Melt butter in a skillet over medium heat.
  2. Add minced garlic and sauté briefly until fragrant.
  3. Stir in corn and cook for 3–4 minutes.
  4. Lower heat and add cream cheese, stirring until melted.
  5. Pour in milk and stir until creamy.
  6. Add shredded cheeses and mix until fully melted.
  7. Season with salt, pepper, and smoked paprika.
  8. Cook until thickened, garnish, and serve warm.

Notes

Add jalapeños or bacon for flavor variations.
