- In a bowl, mix shredded chicken with barbecue sauce, salt, and pepper until evenly coated.
- Heat a nonstick skillet over medium heat and lightly grease with olive oil or butter.
- Place one tortilla in the skillet and sprinkle cheese over half of it.
- Add a layer of BBQ chicken, red onion, and cilantro on top of the cheese.
- Top with a little more cheese and fold the tortilla in half.
- Cook 2–3 minutes per side until golden and cheese is melted.
- Remove from skillet, rest briefly, slice, and serve warm.
Notes
Use rotisserie chicken for speed and try different BBQ sauces for variety.
