Ingredients
  

Quesadillas
  • 2 cups cooked chicken shredded
  • 0.5 cup barbecue sauce
  • 1.5 cups mozzarella cheese shredded
  • 1 cup cheddar cheese shredded
  • 4 flour tortillas large
  • 0.25 cup red onion thinly sliced
  • 2 tbsp fresh cilantro chopped
  • 1 tbsp olive oil or butter for skillet
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. In a bowl, mix shredded chicken with barbecue sauce, salt, and pepper until evenly coated.
  2. Heat a nonstick skillet over medium heat and lightly grease with olive oil or butter.
  3. Place one tortilla in the skillet and sprinkle cheese over half of it.
  4. Add a layer of BBQ chicken, red onion, and cilantro on top of the cheese.
  5. Top with a little more cheese and fold the tortilla in half.
  6. Cook 2–3 minutes per side until golden and cheese is melted.
  7. Remove from skillet, rest briefly, slice, and serve warm.

Notes

Use rotisserie chicken for speed and try different BBQ sauces for variety.
