Ingredients
  

Bread Pudding Base
  • 6 cups brioche or French bread cubed
  • 2 pears peeled and diced
  • 3 eggs large
  • 1.5 cups whole milk
  • 0.5 cup heavy cream
  • 0.75 cup granulated sugar
  • 2 tbsp brown sugar
  • 1 tsp ground cardamom
  • 0.5 tsp cinnamon
  • 0.25 tsp salt
  • 1 tbsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease baking dish.
  2. Combine bread cubes and pears.
  3. Whisk eggs, milk, cream, sugar, spices, and vanilla.
  4. Pour custard over bread mixture and rest 15 minutes.
  5. Bake 40–45 minutes until golden and set.

Notes

Best served warm with vanilla sauce.
