- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss cubed potatoes with olive oil, garlic powder, paprika, salt, and black pepper.
- Spread potatoes on baking sheet and roast 30–35 minutes, flipping halfway, until crispy.
- Heat a skillet over medium heat and add ground beef.
- Season beef with onion powder, garlic powder, smoked paprika, salt, and pepper and cook until browned.
- Whisk together mayonnaise, ketchup, mustard, relish, and paprika to make burger sauce.
- Assemble bowls with potatoes, beef, lettuce, tomatoes, pickles, cheese, and sauce.
