Ingredients
  

Cookie Batter
  • 1 cup creamy peanut butter
  • 0.5 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • salt pinch
Filling
  • 1.5 cups semi-sweet chocolate chips
  • 3 tbsp unsalted butter

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Line an 8×8 or 9×9 baking dish with parchment paper.
  2. Beat softened butter and peanut butter until creamy.
  3. Add vanilla and salt. Mix in powdered sugar until thick.
  4. Press the peanut butter mixture into the pan.
  5. Melt chocolate chips and butter until smooth.
  6. Spread the chocolate over the peanut butter layer.
  7. Chill for 2 hours or freeze for 45 minutes.
  8. Slice and serve.

Chill thoroughly for clean cuts.
