Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll puff pastry sheets to 10x12-inch rectangles. Brush lightly with olive oil.
- Evenly sprinkle blue cheese, walnuts, thyme, and black pepper over pastry.
- Roll the pastry into a log starting from one long edge. Slice into 1–1.5 inch thick pieces.
- Place slices cut-side up on the baking sheet, leaving space between each.
- Brush tops with beaten egg.
- Bake 20–25 minutes until puffed and golden brown.
- Cool slightly on wire rack before serving. Optional: drizzle with honey or fig jam.
