Ingredients
  

Chicken & Sauce
  • 1.5 lbs chicken breast or thighs thinly sliced
  • 2 cups mushrooms sliced
  • 1 onion sliced
  • 3 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 tbsp oil
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1.5 tsp black pepper freshly cracked
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 0.5 cup chicken broth
  • 1 tsp cornstarch mixed with 1 tbsp water

Equipment

  • Mixing bowls

  • Hand mixer or stand mixer

Method
 

  1. Whisk together soy sauces, oyster sauce, vinegar, sugar, broth, and black pepper. Stir in cornstarch slurry.
  2. Heat oil in a skillet and add chicken. Stir-fry until cooked through and lightly browned.
  3. Add garlic, ginger, and onion and sauté until fragrant.
  4. Add mushrooms and cook until tender.
  5. Return chicken to skillet and pour sauce over mixture.
  6. Stir until sauce thickens and coats chicken and mushrooms.
  7. Garnish with green onions and serve hot.

Notes

For extra heat, add chili flakes or sliced peppers.
