Ingredients
  

Meatballs
  • 1 lb ground beef 80/20
  • 0.5 lb ground pork
  • 0.75 cup breadcrumbs
  • 0.5 cup milk
  • 2 eggs large
  • 0.5 cup Parmesan cheese grated
  • 3 cloves garlic minced
  • 0.25 cup onion finely chopped
  • 2 tbsp fresh parsley chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning
  • 0.5 tsp smoked paprika

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a greased wire rack on top.
  2. In a large bowl, combine breadcrumbs and milk. Let sit 1–2 minutes until absorbed.
  3. Add eggs, cheese, garlic, onion, parsley, and seasonings. Mix gently.
  4. Add ground beef and pork. Mix just until combined.
  5. Form 1½-inch meatballs and place on rack.
  6. Bake 18–22 minutes until cooked through. Optional: broil 1–2 minutes for extra browning.
  7. Rest 5 minutes before serving.

Notes

Do not overmix meat to keep meatballs tender and juicy.
