Ingredients
  

Gratin Base
  • 2 lbs Brussels sprouts trimmed and halved
  • 2 tbsp unsalted butter
  • 2 cloves garlic minced
  • 1.5 cups heavy cream
  • 0.5 cup whole milk
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp nutmeg
  • 1 cup Gruyère cheese shredded
  • 1 cup sharp cheddar cheese shredded
Topping
  • 0.5 cup breadcrumbs panko
  • 0.5 cup Parmesan cheese grated
  • 1 tbsp olive oil

Method
 

  1. Preheat oven to 375°F (190°C). Butter a baking dish.
  2. Trim and halve Brussels sprouts. Set aside.
  3. Melt butter in a skillet. Add garlic and cook until fragrant.
  4. Add cream, milk, salt, pepper, and nutmeg. Simmer briefly.
  5. Stir in Gruyère and cheddar until melted.
  6. Fold Brussels sprouts into cheese sauce.
  7. Transfer to baking dish.
  8. Mix breadcrumbs, Parmesan, and olive oil. Sprinkle on top.
  9. Bake uncovered 30–35 minutes until golden and bubbly.

Let rest 5 minutes before serving for best texture.
