- Preheat oven to 375°F (190°C). Butter a baking dish.
- Trim and halve Brussels sprouts. Set aside.
- Melt butter in a skillet. Add garlic and cook until fragrant.
- Add cream, milk, salt, pepper, and nutmeg. Simmer briefly.
- Stir in Gruyère and cheddar until melted.
- Fold Brussels sprouts into cheese sauce.
- Transfer to baking dish.
- Mix breadcrumbs, Parmesan, and olive oil. Sprinkle on top.
- Bake uncovered 30–35 minutes until golden and bubbly.
