Ingredients
  

Casserole
  • 1 lb ground beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 cups enchilada sauce red
  • 3 cups shredded cheese cheddar and Monterey Jack
  • 12 corn tortillas halved

Equipment

  • Baking dish
  • Wooden spoon

Method
 

  1. Preheat oven to 375°F (190°C) and grease baking dish.
  2. Cook onion and garlic in skillet, then brown beef with spices.
  3. Add enchilada sauce and simmer briefly.
  4. Layer sauce, tortillas, beef, and cheese in baking dish.
  5. Bake covered 25 minutes, uncover and bake until bubbly.
