- Toss diced chicken with salt, pepper, and cornstarch. Cook in skillet with oil until golden and cooked through.
- Mix mayonnaise, sweet chili sauce, sriracha, and lime juice in a small bowl.
- Sauté garlic, bell peppers, and carrots until slightly tender but crisp.
- Add rice to skillet and stir-fry 3–5 minutes. Drizzle soy sauce and sesame oil.
- Return chicken to skillet and pour Bang Bang sauce over all. Toss to coat evenly.
- Garnish with sesame seeds and green onions. Serve immediately.
Notes
Use day-old rice for best texture and flavor absorption.
