Balsamic Meatballs & Sweet Potato Mash

Ingredients
  

Meatballs
  • 1 lb ground beef or turkey
  • 0.5 cup breadcrumbs
  • 1 egg large
  • 2 cloves garlic minced
  • 0.25 cup Parmesan cheese grated
Sweet Potato Mash
  • 2 sweet potatoes large, cubed
  • 2 tbsp unsalted butter
  • 0.25 cup milk or cream

Equipment

  • Mixing bowls
  • Baking sheet

  • Potato masher

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix all meatball ingredients until just combined. Roll into balls and place on baking sheet.
  3. Bake meatballs for 18–20 minutes until cooked through.
  4. Boil sweet potatoes until fork-tender, then mash with butter and milk.
  5. Simmer balsamic glaze ingredients until thickened.
  6. Toss baked meatballs in balsamic glaze and serve over sweet potato mash.

Notes

Leftovers store well for up to 3 days in the refrigerator.
