Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat salmon fillets dry and drizzle with olive oil, lemon juice, garlic, lemon zest, thyme, salt, pepper, and smoked paprika. Rub gently.
- Place salmon on baking sheet and bake 12–15 minutes until salmon flakes easily with a fork.
- Heat butter and 1 tsp olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds.
- Add spinach in batches, tossing until wilted, about 3–4 minutes. Season with salt and pepper.
- Transfer spinach to plates, top with baked salmon, sprinkle almonds if desired, and serve with lemon wedges.
Notes
Optionally add dill, parsley, or honey mustard glaze for flavor variations.
