Baked Salmon With Spinach

Ingredients
  

Salmon Fillets
  • 4 fillets salmon 6 oz each
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp lemon zest
  • 2 tbsp lemon juice freshly squeezed
  • salt and pepper to taste
  • 0.5 tsp smoked paprika optional
  • 0.5 tsp thyme dried or 1 tsp fresh
Spinach
  • 5 cups fresh spinach washed and trimmed
  • 1 tbsp butter
  • 0.25 cup sliced almonds optional garnish

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat salmon fillets dry and drizzle with olive oil, lemon juice, garlic, lemon zest, thyme, salt, pepper, and smoked paprika. Rub gently.
  3. Place salmon on baking sheet and bake 12–15 minutes until salmon flakes easily with a fork.
  4. Heat butter and 1 tsp olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds.
  5. Add spinach in batches, tossing until wilted, about 3–4 minutes. Season with salt and pepper.
  6. Transfer spinach to plates, top with baked salmon, sprinkle almonds if desired, and serve with lemon wedges.

Notes

Optionally add dill, parsley, or honey mustard glaze for flavor variations.
