Ingredients
  

  • 2 lbs baby potatoes halved
  • 1 block feta cheese 7-8 oz
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp oregano
  • 0.5 tsp paprika

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil and seasonings.
  3. Place feta in center and bake 35–45 minutes.
  4. Mash feta into potatoes and garnish.

Notes

Add lemon zest for brightness or chili flakes for heat.
