Ingredients
  

Potatoes
  • 2 lbs baby potatoes halved
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
Feta
  • 7 oz feta cheese block
  • 1 tsp dried oregano
  • 1 lemon zest and juice
  • 2 tbsp fresh parsley chopped

Equipment

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss potatoes with olive oil, garlic, salt, pepper, and oregano.
  3. Spread potatoes on baking sheet and place feta block in the center.
  4. Roast for 40–45 minutes, flipping potatoes halfway.
  5. Add lemon zest and juice, mash feta, and toss with potatoes.
  6. Garnish with fresh parsley and serve warm.

Notes

Serve immediately for best texture.
