Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss potatoes with olive oil, garlic, salt, pepper, and oregano.
- Spread potatoes on baking sheet and place feta block in the center.
- Roast for 40–45 minutes, flipping potatoes halfway.
- Add lemon zest and juice, mash feta, and toss with potatoes.
- Garnish with fresh parsley and serve warm.
