Ingredients
  

  • 2 lbs baby potatoes
  • 7 oz block feta cheese
  • 0.33 cup olive oil
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 lemon zested and juiced

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, garlic, oregano, salt, and pepper.
  3. Roast potatoes for 35 minutes, flipping once.
  4. Smash potatoes gently and add feta cheese.
  5. Bake another 15 minutes until feta is soft and golden.

Notes

Finish with fresh herbs and lemon juice before serving.
