Method
- Preheat oven to 400°F (200°C) and lightly oil a baking dish.
- Place the feta block in the center of the dish and scatter tomatoes and spinach around it.
- Drizzle olive oil over everything and season with garlic, oregano, salt, pepper, and red pepper flakes.
- Bake for 15 minutes until tomatoes soften and feta is warmed through.
- Remove dish from oven and create small wells. Crack eggs into each well.
- Return to oven and bake 8–12 minutes until egg whites are set and yolks reach desired doneness.
- Serve warm with bread or salad.
Notes
For softer yolks, remove from oven earlier. Serve immediately for best texture.
