Ingredients
  

Main Ingredients
  • 1 block feta cheese about 7 oz
  • 4 eggs large
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes halved
  • 2 tbsp olive oil
  • 1 clove garlic minced
  • 0.25 tsp red pepper flakes optional
  • 0.5 tsp dried oregano
  • 0.25 tsp black pepper
  • 0.25 tsp salt to taste

  • Measuring spoons

Method
 

  1. Preheat oven to 400°F (200°C) and lightly oil a baking dish.
  2. Place the feta block in the center of the dish and scatter tomatoes and spinach around it.
  3. Drizzle olive oil over everything and season with garlic, oregano, salt, pepper, and red pepper flakes.
  4. Bake for 15 minutes until tomatoes soften and feta is warmed through.
  5. Remove dish from oven and create small wells. Crack eggs into each well.
  6. Return to oven and bake 8–12 minutes until egg whites are set and yolks reach desired doneness.
  7. Serve warm with bread or salad.

Notes

For softer yolks, remove from oven earlier. Serve immediately for best texture.
