Ingredients
  

Salad Base
  • 2 avocados diced
  • 1 mango large, diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup cilantro chopped
Dressing
  • 2 tbsp lime juice freshly squeezed
  • 1 tbsp honey or agave syrup
  • 1 tbsp olive oil
  • to taste salt and pepper
Optional Garnishes
  • 2 tbsp feta cheese crumbled
  • 2 tbsp pumpkin seeds or cashews toasted
  • 1/4 tsp chili flakes optional

Method
 

  1. In a large bowl, combine diced avocado, mango, cherry tomatoes, red onion, and chopped cilantro.
  2. In a small bowl, whisk together lime juice, honey, olive oil, salt, and pepper.
  3. Drizzle dressing over salad and gently toss to coat evenly.
  4. Add optional garnishes such as feta, toasted seeds, or chili flakes before serving.

Notes

Assemble salad just before serving to keep avocado fresh.
