Ingredients
  

Chia Pudding
  • 0.5 cup chia seeds
  • 2 cups milk of choice
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 0.5 tsp cinnamon
Apple Filling
  • 2 cups apples peeled and diced
  • 1 tbsp coconut oil or butter
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
Crumble Topping
  • 0.5 cup rolled oats
  • 2 tbsp almond flour
  • 1.5 tbsp coconut oil or butter
  • 1 tbsp maple syrup
  • 0.5 tsp cinnamon

Method
 

  1. Whisk chia seeds, milk, maple syrup, vanilla, and cinnamon. Rest 5 minutes, whisk again, then refrigerate at least 4 hours or overnight.
  2. Cook apples with coconut oil, maple syrup, cinnamon, and nutmeg over medium heat until tender, about 8–10 minutes.
  3. Toast oats, flour, coconut oil, maple syrup, and cinnamon in a skillet until golden and fragrant.
  4. Layer chia pudding into jars, top with apples and crumble.
  5. Serve immediately or refrigerate up to 4 days.

Notes

For best texture, store crumble separately and add just before serving.
