Ingredients
  

Pork
  • 1.5 lbs pork loin
Sauce
  • 1 cup apple cider
  • 1 tbsp Dijon mustard
  • 2 cloves garlic minced
Sweet Potatoes
  • 2 lbs sweet potatoes peeled
  • 3 tbsp butter
  • 0.25 cup cream

Equipment

  • Large skillet
  • Pot
  • Potato masher

Method
 

  1. Boil sweet potatoes until tender and mash with butter and cream.
  2. Season and sear pork until golden.
  3. Simmer apple cider, garlic, mustard, and thyme.
  4. Return pork to sauce and cook until done.
  5. Reduce sauce and serve pork over sweet potatoes.

Notes

Rest pork before slicing for best texture.
