Ingredients
  

  • 2 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tsp turmeric
  • 2 stalks celery chopped
  • 2 carrots chopped
  • 1 lb chicken breast diced
  • 1 head cauliflower cut into florets
  • 6 cups chicken broth low sodium

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion until translucent, then add garlic, ginger, and turmeric.
  3. Add celery, carrots, and chicken. Cook until chicken is lightly opaque.
  4. Stir in cauliflower, broth, and seasoning.
  5. Simmer gently for 25–30 minutes until tender.

Notes

Adjust spices to taste and add lemon juice for brightness.
