Method
- Preheat oven to 350°F (175°C). Ensure cake pan is clean and ungreased.
- Beat egg whites and cream of tartar until soft peaks form.
- Gradually add half of the sugar and continue whipping to stiff peaks.
- Sift remaining sugar with cake flour and salt.
- Fold dry ingredients into egg whites in batches.
- Transfer batter into pan and smooth the top.
- Bake 35–40 minutes until golden and springy.
- Invert cake to cool completely before removing.
Notes
Use a serrated knife for slicing. Cool completely for best texture.
