Ingredients
  

Cake Batter
  • 1.5 cups egg whites room temperature
  • 1.5 tsp cream of tartar
  • 1.5 cups granulated sugar divided
  • 1 cup cake flour sifted
  • 1.5 tsp vanilla extract
  • 0.25 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C). Ensure cake pan is clean and ungreased.
  2. Beat egg whites and cream of tartar until soft peaks form.
  3. Gradually add half of the sugar and continue whipping to stiff peaks.
  4. Sift remaining sugar with cake flour and salt.
  5. Fold dry ingredients into egg whites in batches.
  6. Transfer batter into pan and smooth the top.
  7. Bake 35–40 minutes until golden and springy.
  8. Invert cake to cool completely before removing.

Notes

Use a serrated knife for slicing. Cool completely for best texture.
