Ingredients
  

Cookie Batter
  • 4 English muffins or mini naan split into 8 bases
  • 0.5 cup pizza sauce
  • 1.25 cups shredded mozzarella
  • 12-16 pepperoni slices mini or regular

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 400°F (205°C). Line a baking sheet with parchment.
  2. Place English muffins or naan bases onto the baking sheet.
  3. Spread 1–2 tablespoons of pizza sauce onto each base.
  4. Top with shredded mozzarella, distributing evenly.
  5. Add pepperoni slices on top.
  6. Bake 10–12 minutes until cheese is melted and edges are crisp.
  7. Cool on a wire rack for 1–2 minutes before serving.

Notes

For added crispness, brush bases lightly with olive oil before adding sauce.
