Ingredients
  

  • 1 lb pork tenderloin sliced into medallions
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 shallot minced
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 2 tbsp Dijon mustard
  • 1 tbsp whole-grain mustard
  • 0.75 cup heavy cream

Method
 

  1. Season pork medallions with salt and pepper.
  2. Heat olive oil in a skillet and sear pork 2–3 minutes per side. Remove and set aside.
  3. Add butter, shallot, and garlic to the pan. Cook until fragrant.
  4. Deglaze with chicken broth, then stir in mustards.
  5. Add cream and simmer until slightly thickened.
  6. Return pork to the pan and simmer until cooked through.

Notes

Do not overcook the pork to keep it tender and juicy.
