Method
- Season pork medallions with salt and pepper.
- Heat olive oil in a skillet and sear pork 2–3 minutes per side. Remove and set aside.
- Add butter, shallot, and garlic to the pan. Cook until fragrant.
- Deglaze with chicken broth, then stir in mustards.
- Add cream and simmer until slightly thickened.
- Return pork to the pan and simmer until cooked through.
Notes
Do not overcook the pork to keep it tender and juicy.
