Ingredients
  

Pasta Dish
  • 12 oz pasta penne, rotini, or rigatoni
  • 1 lb Italian sausage mild or spicy
  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 1 red bell pepper sliced
  • 1 zucchini halved and sliced
  • 1 cup cherry tomatoes halved
  • 3 cloves garlic minced
  • 1.5 cups marinara sauce
  • 0.5 cup pasta water reserved
  • 1 tsp Italian seasoning
  • 0.5 tsp red pepper flakes optional
  • salt and pepper to taste
  • 0.25 cup Parmesan grated
  • fresh basil garnish

Equipment

  • Large skillet
  • Pasta pot
  • Wooden spoon
  • Knife and cutting board

Method
 

  1. Cook pasta in salted boiling water until al dente; reserve 1/2 cup pasta water and drain.
  2. Heat olive oil in a skillet and brown sausage until cooked through.
  3. Add onion, bell pepper, zucchini, and tomatoes; sauté until softened.
  4. Add garlic, Italian seasoning, and red pepper flakes; cook 1 minute.
  5. Pour in marinara sauce and simmer 2–3 minutes.
  6. Add pasta to skillet and toss with sauce, adding pasta water as needed.
  7. Stir in Parmesan and season with salt and pepper.
  8. Serve warm topped with fresh basil.

Notes

For a creamy twist, add a splash of heavy cream or a spoonful of mascarpone.
