Ingredients
  

Salad
  • 1 can chickpeas drained and rinsed
  • 1 can cannellini beans drained and rinsed
  • 1 can kidney beans drained and rinsed
  • 1 cup cucumber diced
  • 0.25 cup red onion finely chopped
  • 0.25 cup fresh parsley chopped
  • 0.33 cup feta cheese crumbled
Dressing
  • 0.25 cup extra virgin olive oil
  • 2 tbsp lemon juice fresh
  • 1 tbsp red wine vinegar
  • 1 clove garlic minced
  • 0.5 tsp dried oregano
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper freshly ground

Method
 

  1. Add drained and rinsed beans to a large mixing bowl.
  2. Add cucumber, red onion, and parsley to the bowl.
  3. In a small bowl, whisk olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and pepper.
  4. Pour dressing over the bean mixture and toss gently.
  5. Fold in crumbled feta cheese.
  6. Let marinate 5–10 minutes, then serve or refrigerate.

Notes

This salad tastes even better after chilling and is ideal for meal prep.
