Ingredients
  

Fish
  • 4 white fish fillets cod or haddock
  • 0.5 cup breadcrumbs
  • 0.5 cup Parmesan cheese finely grated
  • 1 tsp garlic powder
  • 1 tsp lemon zest
  • 2 tbsp olive oil

Equipment

  • Non-stick pan
  • Mixing bowls
  • Fish spatula

Method
 

  1. Pat fish dry and season with salt and pepper.
  2. Mix breadcrumbs, Parmesan, garlic powder, and lemon zest.
  3. Brush fish with olive oil and press into crumb mixture.
  4. Cook crumb-side down in a hot pan until golden, then flip and finish cooking.
